Making Salami and Pastrami

Salami

is made from Pork mince, with a generous amount of fat added to it. We mix it with all the herbs and spices to give it, it’s flavor and let it wait a short time before putting it into casings. Then we hang it up and let it dry in a suitable cool place until ready. The taste is very good. This Salami is very easy to make and without any preservatives. Pastrami

is usually made from beef brisket, you can also use Pork or Venison if you prefer. The meat is rubbed in herbs and spices and marinated in a bag, then we slowly bake it. If you want you can also smoke it.
